Easy one pan BBQ Bacon Chicken Pasta
I am a huge fan of easy to make meals. Life is hectic, a home cooked meal that doesn't take a lot of time and work makes me happy, and makes me feel like i'm still doing a good job as a mom. I also am a fan of anything with bacon. Bacon is delicious and should be used more in my opinion. Both of those are reasons i love BBQ bacon chicken pasta. It takes maybe a half an hour to make and even my picky son loves it.
Ingredients
5 Slices of diced bacon
1 package of chicken breasts, cut into chunks
2-3 cloves of minced garlic (i use 3 but i also love garlic)
1/2 an onion, diced
1 can of chicken broth
1/4 cup tomato sauce (My friend makes hers with a small can of drained, diced ttomatoes I have a thing about the texture of tomato's so i use tomato sauce)
1/2 cup of milk
3 cups of rotini pasta
Salt, pepper, and red pepper flakes or chili powder to taste
1/4 cup of BBQ sauce
1 cup shredded cheese
Heat a large pot on medium till it's hot, then add the diced bacon and cook until crispy. Drain the bacon and set aside, leaving half the fat in the pan, then add the chicken and cook until brown, 3-4 minutes. Add the garlic and onions and cook for 3-4 more minutes, taking care not to burn the garlic and make it become bitter.
Stir in the chicken broth, milk, tomato sauce or tomato's, salt, pepper, red pepper, pasta and bacon. Bring to a boil, cover, then reduce heat to medium low. Cook until the pasta is done and most of the liquid is absorbed, 12-15 minutes. (I know it looks weird in the picture, but trust me, it's amazing!) Stir in the BBQ sauce and the cheese until heated through, maybe 3 minutes. Serve it while it's hot.
This is super easy meal to make, and one of our go to meals. My son is picky, so anything he enjoys gets a thumbs up from me. I hope you all enjoy it too!
